They’re not super important to the main plot, but they are a nice bonus for fans of the series that gives more screentime for the characters. In the case of Aizen, there’s actually a hidden message in one of them.
As pointed out by Twitter user ShonenGames, Aizen’s secret story, which is going to take a lot of effort to see since the missions are unlocked late into the game, features a scene that’s meant to act as a fourth-wall-breaking message to players. The message can be seen after Aizen and Ichigo fight in the secret story, which leads to things fading to white.

The message itself is very cryptic and doesn’t really seem to be hinting at anything in particular, but it is reminiscent of the sort of trick that games like Nier Automata pull. It mentions choices despite there not being one to make, so it seems like it’s just a nice bit of set-dressing to represent Aizen’s thoughts after his defeat.
