We managed to find a couple of Rime Beetles in the following areas of the Iceshard Cliffs:
If you open up your map while in the field, you can see the Filter Icons menu to the right of the fast travel icon. By using this, you can easily scroll through the different environmental icons on the map, find the Rime Beetle, and then you can see its exact locations.
You can even set a waypoint on the Beetles with a press of the right stick on your controller. Your Seikret can then auto-lead you to the creature.
Once you find the Rime Beetle scurrying around the snow, you can either scroll through your item list until you see the Capture Net or use the Radial Menu to check out your essential tools.
Once the baby is captured, you can return to Samin for your reward.
