Differences Between Bows & Crossbows Explained In Kingdom Come: Deliverance 2
Both options excel in their own area:

Early into the game when Henry’s strength is low, he isn’t able to pull the bowstring on a bow back very far, so, the damage and range won’t be very good. That being said, this will not be a problem early into the game, as it’s almost impossible to not raise Henry’s strength throughout the game since fighting in melee at all gives him decent XP for it. Bows are also the more flexible option, as bows can be quickly reloaded while moving, and the reload time is very short compared to a Crossbow.
Early into the game, Crossbows do put out a lot more damage and have a better range, though even a small crossbow will greatly limit Henry’s movement while reloading. Larger crossbows may also require Henry to stop moving completely while reloading, and that is almost never ideal. Overall, you’ll get fewer shots off with a Crossbow, but the range and damage it outputs make each shot more deadly and more likely to take out whoever you’re shooting at.

Are Crossbows Or Bows Better In Kingdom Come: Deliverance 2
Throughout the course of the game, bows will overall be the better option as the slower reload time of crossbows will always be an issue as enemies come running at you after the first shot. Crossbows do have the occasional use when fighting in story-related battles where you’ll have allies helping keep the enemy back while you reload and focus on fighting, but usually, bows will be better for getting at least a few arrows off during your average encounter through the game. Crossbows and bolts can also be very expensive, making bows and arrows the cost-effective option. Bows also have the potential for more growth as you increase your Strength, so their damage will eventually get very close to a crossbow and make them the clear better option throughout the game.
