While you’ll naturally earn XP and increase your Strength stat as you play through Kingdom Come: Deliverance 2’s story, there are certain things you can unlock or focus on to improve the stat faster. Since you’re locked out of using the best weapons until your Strength stat is high enough, you’ll want to do everything possible as soon as you can.
How To Increase Strength
The main way to improve your Strength stat is through combat. Whether it be with your fists or swords, every time you attack or kill someone you will gain some XP towards the stat.
If you want to speed the process up, you can head out into the open world and find some bandits to kill or people to fight. While you do that, your Strength stat will increase. Combat is the only way to increase it, so that’s what you should focus on.
Skills That Improve Strength
There are some skills you can unlock that improve your strength in certain situations or increase the rate that you earn XP towards the stat. Those skills are:

With those skills unlocked, you’ll be maximising your Strength skill as much as possible. You should unlock them as soon as you can.
